Production steps:
Step 1: buy the duck breast meat / duck steak with skin from the supermarket, wash it thoroughly and suck up the water. Sprinkle with lemon juice and vanilla to remove the duck smell.
Step 2: use the tool of grinding ginger powder to grind out the orange peel for salting duck. Orange peel fragrance is very fresh, better than lemon! In addition, the pigment of orange peel is heavier than orange juice. It's more beautiful to color duck skin and duck meat.
Step 3: soak the duck meat with crushed vanilla and lemon juice in orange juice (half an orange), mix the orange peel in the second step, seal it with plastic wrap, keep it in the refrigerator and marinate it for one night. If you can't wait all night, poke a small hole in the duck meat with a fork to help it taste. In this way, it will be good to keep it for a few hours.
Step 4: take it out the next day, use kitchen water absorption / oil absorption paper to dry the duck skin, heat the pan to medium heat, do not put oil, duck skin side down, medium heat for 6 minutes to force the duck oil out, it is best to cover the pan to avoid splashing the duck oil. After the duck oil comes out, you can turn the other side of the duck and fry it over low heat. Close the lid. The whole process takes about 20 minutes. The duck meat is thick and hard to be cooked. Medium and low heat can ensure that it is fully cooked without pasting the bottom.
Step 5: after the duck is fried, slice it while it's still hot. First, prepare shredded lettuce and sweet pepper
Step 6: spread the duck until it's warm, slice it, place it next to the shredded lettuce in the previous step, pass a few drops of fresh orange juice, sprinkle salt, and squeeze on the chubby salad dressing
Step 7: the duck is just cooked with a trace of pink. It's charred on the outside and tender on the inside. There's no strong sauce like beef steak. However, it seems that the dried pieces of meat are full of refreshing orange flavor and enjoy with salad dressing. I didn't expect that the duck could be so fresh!
