Production steps:
Step 1: 100g high flour, add water and yeast to make yeast head, ferment at room temperature for three hours, and then refrigerate overnight (a lot of honeycomb tissue can be seen after tearing the yeast head)
Step 2: take out the yeast head, add 100g high flour and 100g low flour, mix the yeast and water
Step 3: knead until you can pull out the translucent film
Step 4: Sprinkle appropriate amount of flour on the panel, flatten the dough, fold it up, down, left and right, put it in the basin, cover it with plastic film and ferment for about 40 minutes
Step 5: ferment to half the size, you can see the fermented dough close to the bottom of the basin
Step 6: after fermentation, take out the dough, continue to press flat, fold up and down, left and right
Step 7: put it in the pot, cover it with plastic film and ferment for about two hours
Step 8: ferment the dough to double the size
Step 9: take out the dough to exhaust, fold it into four equal parts and relax for about 15 minutes
Step 10: take a dough and roll it up to form a stick
Step 11: put it on a tin foil covered grill, spray a layer of water on the surface of the fermented stick, brush a layer of egg liquid, bake at 200 ℃ for about 15 minutes, remember to take out the stick and spray water several times during the process, and pay attention to the coloring degree
