Production steps:
Step 1: (making chicken stuffing) dice chicken, marinate with salt, sugar and pepper for 30 minutes. Leave a bit of large onion slices, dice the remaining onions and mushrooms and set aside. Saute the diced onion in an oil-free pan until fragrant, then saute the marinated chicken until the chicken is white, finally saute the diced mushroom until cooked, and set aside.
Step 2: (making white sauce) heat the butter in material B, add the onion slices and stir fry until the flavor overflows. Remove the onion slices, add the flour in the white sauce and mix well until there is no powder. Continue to add milk and cook until thick. Add the chicken stuffing in step 1 and set aside.
Step 3: mix the salt, sugar and ice water together until the salt and sugar are completely melted. The butter in the pie peel material is cut into pieces and softened at room temperature. Add the low gluten flour in the pie peel material and mix it into powder granules. Then add the ice salt and sugar water just now and mix it evenly to form a dough and flatten it. Step 4: take out the pie dough in step 3, divide it into five parts evenly, press it into pancake shape with a rolling pin, put it in the mold, remove the surplus dough at the edge, poke the hole with a fork, and let it rest for 15 to 30 minutes.
Step 5: put the white sauce chicken meat stuffing into the finished pie skin, and brush the surface with egg liquid.
Step 6: preheat the oven at 180 ℃ and bake at 210 ℃ for 25 minutes until the pie skin is golden.
Step 7: when making the stuffing, my husband ate it several times without paying attention. I use a 4-inch mold, afternoon tea with friends, one person a pie, just right. If it's too much trouble, you can make a 6-inch pie. I should give you enough.
