Spareribs with brown sauce

Production steps:
Step 1: Ingredients: 1 potato, 500g spareribs, 3 star anise, 3 fragrant leaves and 3 dried peppers. (forgot to shoot rock sugar, garlic sprouts and ginger slices)
Step 2: blanch the spareribs in the pan with ginger slices, wash them in cold water and drain the water.
Step 3: put peanut oil into pan, put star anise, fragrant leaves and dried pepper into pan, stir fry over low heat, then throw them away. Then pour in the ribs and fry until golden on both sides. (I don't fry two sides golden here, I'm afraid my family will get angry, but it will be more fragrant and delicious when I fry two sides golden.)
Step 4: add peanut oil into the frying pan, add 50 grams of rock sugar, stir fry the color slowly over low heat, just like the picture.
Step 5: pour 1 tbsp cooking wine, 2 tbsp soy sauce, 1 tbsp soy sauce and a little salt into the bowl
Step 6: pour the spareribs into the frying pan of rock sugar, add the seasoning in picture 5, stir fry evenly, then add water, submerge the surface of the spareribs, bring to a boil over high heat, and turn to low heat for 45 minutes.
Step 7: peel the potatoes, cut them into small pieces and set aside.
Step 8: pour peanut oil into the pan, fry the potatoes over medium heat for 5 minutes, that is, the surface of the potatoes is yellowish and crisp. (in this way, the ribs are added to stew together so that they won't be rotten.)
Step 9: after stewing the ribs for 45 minutes, there is still some soup left.
Step 10: add in the potatoes, stir fry well, simmer together for 15 minutes.
Step 11: finally, add the chopped garlic seedlings and stir fry until mature.
Step 12: the fragrant braised spareribs are ready, delicious!
