Step 1: This recipe is divided into four parts: cupcake, cheese cream, cream, chocolate decoration. Mainly the first three parts. Step 2: put the butter into the milk pot and boil it. Turn off the heat.
Step 3: sift in low gluten flour and mix well.
Step 4: add milk and mix well.
Step 5: add egg yolk in several times, mix well after each addition.
Step 6: the dough is thick and glossy.
Step 7: add sugar to the protein bowl.
Step 8: beat with electric egg beater until hard foaming, lift the egg beater to a firm right angle. Turn on the oven and preheat at 140 degrees.
Step 9: dig a spoonful of protein cream into the egg yolk paste with a rubber scraper and mix well.
Step 10: pour the egg yolk paste into the albumen cream basin and mix it from bottom to top.
Step 11: pour the cake paste into a paper cup, put it into the middle layer of the oven, bake it up and down for 30 minutes, and insert it with a toothpick. If there is no residue, it means it is baked. Remove and cool.
Step 12: melt the chocolate pen in warm water, then draw the decoration of eyes and other parts on the baking pan covered with tarpaulin, cool and solidify. When drawing these parts, do more in case it's not enough.
Step 13: make cheese cream below, ingredients: cheese 140g, butter 50g, sugar 35g, cream 60g. Cut butter and cheese into pieces, put them in a basin, soften at room temperature, and gently poke them into a finger. (butter and cheese can be cut to soften before making cakes)
Step 14: soften and beat with electric egg beater until smooth. Make sure the cheese is free of particles.
Step 15: then add the fine granulated sugar and beat until the hair is swollen, the volume becomes larger, the light color becomes darker, and the paste is formed.
Step 16: then add the light cream and beat until the cream is obviously textured and does not flow.
Step 17: pack the whipped cream into the mounting bag. (the flower mounting bag can be added with or without a round flower mouth)
Step 18: extrude a hemispherical shape on a cool cake.
Step 19: smooth the face slowly with a spatula, especially the face. After smoothing, choose the smoothest place to make the face. Dip a toothpick with a little cream to put the chocolate eyes and mouth on. For white chocolate, use the reverse side to face out. (chocolate must be dried before it can be operated. It can be easily melted without hands.)
Step 20: beat cream below, 100g light cream and 10g fine sugar to harden, showing obvious veins and no flow.
Step 21: put the cream into the flower mounting bag with a small 5-tooth flower mouth, and then extrude the pattern outside the face.
Step 22: finally use tweezers to gently insert the ears on both sides. When you install the ear, you must be careful. The force should be light and even. Otherwise, it is easy to break.
