It's crisp and soft, and the fragrance is very strong. "
Production steps:
Step 1: soak the spareribs in the blood, drain the water, and cut them into small pieces of 2 cm square (I've cut them a little bigger, and it's better to fry them a little smaller), two cloves of garlic, a small piece of ginger, and two pieces of green onion.
Step 2: pack the spareribs in a container, put the onion, ginger and garlic in, sprinkle with pepper powder (half teaspoon), Chinese prickly ash powder (one teaspoon), chili powder, five spice powder (one teaspoon, too much is not delicious), chicken essence (half teaspoon), sugar (one teaspoon), salt, mix and marinate for half an hour to one hour (as long as possible).
Step 3: after pickling, put in flour (can completely wrap all the ribs), starch, the ratio is 2:1, an egg white, four or five drops of sesame oil or edible oil (to prevent the paste from lumps, make the paste more smooth).
Step 4: mix well.
The fifth step: the hot oil in the pot, the amount of oil should be more, the fire, wait until the oil is very hot, put it in the top of the sauce ribs, first do not turn over, the bottom surface is fried, then turn it over, turn it over and fry it for a while, then turn it into medium heat, slowly fry, deep fried, that is completely cooked, and then change the fire, two sides fried for a minute, you can go out of the pot.
