Production steps:
Step 1: cut the pork (cut the fat and lean meat separately), and set aside the scallion, shredded ginger and garlic.
Step 2: wash sauerkraut twice with water, control dry water, cut into shreds for standby.
Step 3: soak the vermicelli in warm water, half cooked (with white heart inside), set aside.
Step 4: put a little soybean oil in the pot, heat it up, add fat shredded pork and stir fry it. When it turns yellow, add lean shredded pork and stir fry it. When it changes color, add scallion and saute it. Then add pepper noodles and soy sauce to make the meat slightly colored.
Step 5: add shredded sauerkraut and continue to stir fry, add shredded pepper, add a little old soup (not too much, or it will be stewed) and stir fry for a while.
Step 6: add vermicelli, add salt and chicken essence, collect the soup and stir fry.

Note: it's better not to be old-fashioned. The color is too dark to look good.
