Production steps:
Step 1: wash hairtail and cut into sections.
Step 2: put hairtail into onion, ginger, salt, monosodium glutamate and cooking wine for a moment.
Step 3: wash the celery and blanch it in boiling water until it is unripe.
Step 4: cut dried parsley and celery into small cubes, add fine salt, monosodium glutamate and white granulated sugar to marinate.
Step 5: marinate celery leaves with fine salt, monosodium glutamate and white granulated sugar.
Step 6: take a piece of "hot and sour heart soup" and cut it into pieces with a knife. Note: please refer to my recipe "hot and sour radish cabbage" for the method of making "hot and sour two hearts".
Step 7: stack the pickled "green celery with dried incense" as a lawn on one side of the plate, decorate it with celery leaves as shrubs, and then decorate it with "hot and sour heart" to make blooming flowers.
Step 8: put the dried starch on the prepared hairtail section and stack it in the side dish for a while.
Step 9: fry the processed hairtail into a pot to make it golden.
Step 10: stack the processed hairtail in the shape of a small wooden house on the plate, and pave the narrow tail section of hairtail into a country trail, and then sprinkle with pepper and salt.
