Production steps:
Step 1: marinate chicken wings with cooking wine, salt, sugar, chicken essence, pepper, fennel, minced garlic and green onion one day in advance. The recommended method is to seal the fuse box and refrigerate it for one day. Or put more salt to marinate for half a day. It is recommended to marinate in the morning and do it in the evening.
Step 2: make it on the second day, cut garlic and tangerine peel into pieces and set aside.
Step 3: if there is a microwave oven, you can put yesterday's pickled chicken wings directly in the microwave oven for 5 minutes. There is no microwave oven to go directly to the next step, but the taste is not too tender.
Step 4: cut the tin foil to 10x10cm in advance, take out the roasted chicken wings (if there is no microwave oven, you can continue the next step) and remove the pepper, fennel, onion and garlic with chopsticks. Then spread honey, like to eat spicy, you can spread a layer of garlic chili sauce sold in the supermarket, or barbecue sauce. (the taste of the sauce depends on your preference. I think the sauce in Richang restaurant should be garlic flavor.) Then sprinkle the garlic and tangerine peel on the chicken wings smeared with honey and chili sauce. Wrap it in tin foil. Step 5: preheat with an iron pot. It's better to use a small constant temperature fire. It's recommended to use an induction cooker. Adjust the temperature to about 120 degrees, and the minimum fire. Make sure that the iron pot is clean, don't put anything, don't put water and oil. Put the chicken wings wrapped in tin foil into the pot. It's better to fry the sealing noodles first. (due to the thick tin foil at the seal, it is not easy to ripen.) Turn over every three minutes or so. Be careful to be scalded when turning, and prevent the tin foil from being pinched. Fry for about 15 minutes and serve. If you don't use the microwave oven in advance, you need to fry for about 25 minutes.
