Yunnan Pu'er tea has a long history of traditional production technology, which can be traced back to the Shang and Zhou dynasties. By the Tang Dynasty, Pu'er tea had been exported to the mainland and Tibet. In Song Dynasty, it played an important role in the trade policy of "tea horse mutual market". In the Ming Dynasty, Pu'er tea was sold more widely, and there was a grand occasion of "all Pu'er tea is owned by scholars". In the Qing Dynasty, Pu'er tea was listed as a tribute, and the imperial court set up an official tea bureau to deal with tea related affairs. Yunnan Pu'er tea is mainly produced in Ning'er Hani and Yi Autonomous County, Menghai county and other places, and has formed a unique production technology in the long-term production process.
Menghai County, Yunnan Province, formerly known as "Buddha sea", is one of the cradles of tea in the world. In 1939, the famous tea man fan Hejun founded Menghai tea factory to produce "Dayi" brand Pu'er tea. After more than 60 years of unremitting efforts, "Dayi" has become a famous tea brand at home and abroad. In 2006, "Dayi" Pu'er tea was rated as "China famous brand agricultural product" by the Ministry of agriculture. The key of making Dayi tea lies in blending and fermentation. Blending is an effective and reasonable combination according to the characteristics of various tea varieties, learning from each other to make up for the lack of a single variety; fermentation refers to the special skill of "artificial late development". The successful research of Dayi tea production technology has made a great contribution to the development of Pu'er tea production.
