Fen Liquor, also known as "Laobai Fen Liquor", is produced in Xinghua village, Fenyang County, Luliang City, Shanxi Province.
Fen Baijiu is a model of Qingxiang liquor, and it is the ancestor of Chinese baijiu. Many famous Chinese wines such as Maotai, Luzhou Daqu, Xifeng and Shuanggou Daqu have used the brewing technology of Fen Liquor for reference.
Fen liquor brewing technology is a set of sorghum, barley, peas, water and other raw materials in a certain ecological conditions fermentation brewing complete technical system, people's consciousness and understanding plays a vital role in which, such as koji making, fermentation, distillation and so on are highly empirical skills. For thousands of years, this skill has been passed down from generation to generation in the way of oral communication, heart leading and apprenticeship, and has been constantly innovated and developed. In today's Fen liquor brewing process, it still plays an irreplaceable key role.
The Yangshao cultural site 6000 years ago has been found in Xinghua village, where Fen Liquor is produced. From the unearthed artifacts, we can judge that there was wine making activity at that time. Fenyang still has the relics of wine making workshops, ancient wells, stone tablets, plaques, old streets and so on in Ming and Qing Dynasties. The inheritance chain of traditional techniques is also continuing. This historical continuity has become a solid foundation for protecting the traditional brewing techniques of Fenyang.
Fen Liquor is gradually expanding in the development. Taking Fen Liquor as the mother liquor, a series of liquor such as laobaifen liquor, Zhuyeqing liquor, rose Fen Liquor and baiyufen liquor are produced. Now there are "sub apricot", "apricot flower" and other distilleries in Xinghua village.
But at present, the large-scale industrial production of Fen Liquor has brought great challenges to the inheritance of the traditional brewing technology of manual workshop. At the same time, there are still some problems in Fenyang, such as shortage of water, air pollution, sorghum and other raw materials. We should attach great importance to them and take timely measures to ensure the normal production of Fen Liquor and the smooth inheritance of Fen liquor brewing technology
