Two female scale insects (about 600g each), 1 piece of ginger, 2 pieces of scallion, appropriate amount of monosodium glutamate, salt and Shaojiu.
Processing steps of Chaozhou Frozen Flower mustard:
First, the scale is salted to death (without shelling, so as to keep the original flavor). Then, ginger, scallion, monosodium glutamate, salt and Shaoxing wine are salted on the scale for 30 minutes. After steaming, ginger and scallion are picked up and frozen in the refrigerator for 60 minutes. Then, they are taken out and put on a plate, served with 2 plates of ginger, rice and Zhejiang vinegar.
