The raw materials of Wuliangye are red sorghum, glutinous rice, rice, wheat and corn. The saccharifying starter is made from pure wheat. There is a special method to make "Baobao starter". When brewing, it must be made with old starter. The water is taken from the center of Minjiang River, and the water quality is clear and fine. Fermentation pits are old pits, some of which are left over from the Ming Dynasty. The fermentation period was more than 70 days, and the cellar was sealed with aged mud. Wuliangye distillery has a set of rich and unique experience in a series of processes, such as layered distillation, cellar picking, high-temperature water measuring, low-temperature cellar entering, dropping cellar to reduce acid, liquor returning fermentation, double bottom fermentation, blending and seasoning, which fully ensures the excellent quality and long-term stability of Wuliangye and wins a good reputation among Chinese and foreign consumers.

The Chinese Baijiu represented by Wuliangye has a history of brewing for more than 3000 years. It is one of the oldest and most mysterious food manufacturing industries in the world. Wuliangye has used over 600 years of ancient techniques, combining the essence of sorghum, rice, glutinous rice, wheat and corn, and brewed in a unique natural environment.
On July 10, 2012, the former General Administration of quality supervision, inspection and Quarantine of the people's Republic of China (AQSIQ) approved the implementation of the protection of "Wuliangye" products of geographical origin.
In July 2019, the Supreme People's Court (hereinafter referred to as the supreme law) decided that Binhe group's production and sale of "jiuliangye", "jiuliangchun" and other products infringed Wuliangye's exclusive trademark right to "Wuliangye" and "wuliangchun", and Binhe group had to compensate Wuliangye for the economic loss of 9 million yuan. Binhe group was also sentenced to stop production and sale of Baijiu products marked with "nine grain spring" and "nine grain liquid" or "nine grain spring" and "nine grain liquid".

Origin environment
Richly endowed by nature, Yibin is located in the core area of "Chinese Baijiu Golden Triangle". It is located in the southern part of Sichuan basin, and is the main ecological barrier in the upper reaches of the Yangtze River. It is a sub tropical humid monsoon climate. It is suitable for the existence of microbes and constitutes a unique wine making environment.
Yibin is located in 27 ° 50 ′ - 29 ° 16 ′ n, 103 ° 36 ′ - 105 ° 20 ′ e, with an average annual rainfall of 1200 mm. The climate is mild, with an average annual temperature of 17.6 ℃. Yibin has an average annual sunshine of 1018.2 hours. The annual temperature difference and day night temperature difference are small, and the humidity is high, which is very conducive to the growth of wine making raw materials.
Yibin has a unique weak acid yellow mud clay with strong viscosity, good water absorption and retention, good sealing, rich in phosphorus, iron, nickel, cobalt and other minerals, which is an excellent natural material for making wine cellars.
Good wine has good water. Minjiang River originates from the southern foot of Minshan Mountain and flows through the rainy jungle area. Along the way, it has good soil and water conservation, clear and transparent all the year round, no pollution, clear water quality, sweet and refreshing taste, slightly sweet, moderate acid and alkali, rich in metasilicic acid, strontium, selenium and other trace elements. It is the top grade of wine production.
historical origin
Yibin City is located in the south of Sichuan Province. It has a three-dimensional climate from the south subtropical zone to the warm and humid zone, with crisscross mountains and rivers and beautiful scenery. It has been a multi-ethnic gathering place since ancient times. In history, people of all nationalities have brewed wine with different flavor and characteristics according to their own traditions and customs. For example, the sake brewed by Liao people in the pre Qin period, the Guajiang wine brewed by Bo people in the Qin and Han Dynasties, and the fruit wine brewed by the Miao people in the Three Kingdoms period with wild red fruits all reflect the unique views and wisdom of the ancient Chinese on wine making technology.
With the continuous integration of national culture, the brewing technology in Yibin area has been improved. In the northern and Southern Dynasties, the Yi people used wheat, highland barley and other grains to brew a kind of ZA wine, which was the first time to use a variety of grains to make wine.
In the Tang Dynasty, four kinds of grain were used to brew a kind of "spring wine". After tasting the spring wine, Du Fu, a poet, put forward the good sentence of "spring wine with heavy blue and lychee with light red". "Spring wine" was later renamed "Chongbi wine".
In the Song Dynasty, Yibin gentleman Yao's distillery used rice, sorghum, glutinous rice, buckwheat and other five kinds of grain to make wine, and the wine quality was very beautiful. Huang Tingjian, a poet of the Song Dynasty, after tasting "Yao Zixue song", gave the following words: "the cup color contends for jade, Baiyun produces Valley", "clear but not turbid, sweet but not dull, pungent but not stinging". This is strikingly similar to Wuliangye's evaluation of "long aroma, mellow taste, delicious taste, clean throat, harmonious taste, just right, especially famous for its comprehensive taste" given by experts at the second national liquor Review Conference in 1963. This is enough to prove that the brewing technology of Wuliangye liquor at that time was mature.
In the early Ming Dynasty, the Chen family of Yibin inherited the Yao family's industry and continued to grow. The old cellar used so far by Wuliangye was built in the Ming Dynasty and has a history of more than 600 years. Not only that, Chen's distillery inherited the production technology of "yaozixuequ", but also summed up "Chen's secret recipe", which made the brewing technology more complete and liquor quality more stable. This is the predecessor of Wuliangye. At that time, the upper class called "Wuliangye" as "yaozixuequ", while the lower class called it "miscellaneous grain wine".
In the first year of Xuantong (1909) of the Qing Dynasty, Deng Zijun, the successor of Chen's secret recipe, brought his own wine making to a family banquet. After tasting the wine, Yang Huiquan of the late Qing Dynasty said: "it seems that such a fine wine is vulgar to call it coarse grain wine, but Yao Zixue's music is elegant, but it can't reflect the charm of this wine. This wine is a collection of the essence of five grains into jade liquid, renamed "Wuliangye" is a popular name, and name can be thought of righteousness. Since then, "yaozixuequ" has been renamed "Wuliangye". It has a history of 100 years.
Production situation
In 2003, Wuliangye series liquor sold 168900 tons, realized main business income of 6.333 billion yuan and net profit of 703 million yuan.
In 2006, a total of 189700 tons of Wuliangye series liquor were sold, and the main business income of liquor was 7333.3737 million yuan. The main business tax and surcharges disclosed that the consumption tax of this period was 543.2752 million yuan.
In 2008, a total of 75800 tons of Wuliangye liquor were sold, a decrease of 22.5% compared with 2007. The operating revenue was 7.933 billion yuan, an increase of 8.25%.
In 2009, a total of 84500 tons of Wuliangye liquor were sold, an increase of 11.48% over the same period of 2008.
In 2016, the sales volume of Wuliangye series liquor was 148700 tons, an increase of 8.25% compared with 137400 tons in 2015. The total operating revenue was 24.544 billion yuan, an increase of 13.32% compared with 21.659 billion yuan in 2015.
In 2017, Wuliangye's sales revenue exceeded 80 billion yuan and its profit exceeded 14 billion yuan.
In 2018, Wuliangye Group achieved sales revenue of 93 billion yuan.
Product honor
Wuliangye liquor first won the gold medal of "Panama International Exposition" in 1915, and then successively won 39 international gold medals in expositions around the world.
In 1995, Wuliangye won the gold medal again at the 13th Panama International Food Expo, and was rated as the "king of China's liquor industry" by the 50th World Statistical Congress.
In June 2002, Wuliangye won the only Gold Award for liquor in Panama at the twentieth international business exhibition. Meanwhile, Wuliangye has also won the title of "national famous liquor" for four times. The four degree has won the gold medal of national quality product. The Wuliangye trademark was named the first China's ten famous trademarks in 1991. After years of building, Wuliangye brand ranks first among the most valuable brands in Chinese Baijiu manufacturing and food industry, and the brand value in 2012 is 65 billion 919 million yuan.
