Fruit liqueur is usually soaked. According to different brewing methods, liqueur includes two categories: high wine and strong sweet wine. High wine is a product obtained by adding alcohol to fresh grapes, grape juice or wine with natural total alcohol content (i.e. sugar content of raw materials / 17) not less than 12 degrees (i.e. sugar content of raw materials ≥ 17 * 12g / L). However, the degree of alcohol produced by fermentation shall not be less than 4 degrees; the degree of alcohol produced by fermentation shall not be less than 4 degrees in fresh grape, grape juice or wine with natural total degree of alcohol not less than 12 degrees, and the degree of alcohol produced by fermentation shall not be less than 4 degrees. In a word, liqueur is more powerful than wine. The improvement of alcohol content can be obtained by freezing concentration, adding alcohol, adding concentrated juice or their mixture. However, the alcohol added must be grape distilled alcohol with alcohol content of no less than 95 ℃ or grape alcohol with alcohol content of 52-80 ℃. Liqueur includes natural sweet wine, flavored wine and fortified wine. Many of the world's famous wines, such as France's soterna, Spain's sherry, Portugal's Porto, all belong to this category.
