Construction background
Zunyi liquor making has a long history, profound connotation, rich content, many famous wine, world-famous, and a large number of unearthed cultural relics show that Zunyi has a long wine culture.
A large number of wine utensils, wine utensils and portraits unearthed in Zunyi witnessed the long history of wine culture in Zunyi. For example, the pottery statues with big mouth unearthed in the east of Renhuai City are the earliest wine wares in the history of our province. There are exquisite bronze wine utensils unearthed from Han Tombs in Wuchuan and Daozhen, bronze wine utensils unearthed from Yaxi Han Tombs in Zunyi, plum bottles unearthed from Song tombs of Xinzhou and yangcan in Zunyi, time of drinking between husband and wife unearthed from yelangba song tombs in Tongzi County, and wine utensils of Ming and Qing Dynasties unearthed from daheshui in Xishui County.
From the end of Ming Dynasty to the beginning of the Republic of China: Maotai "sand returning" process was formed. It is generally believed that the production of distilled liquor is an epoch-making scientific and technological progress in the history of liquor making, which promotes the liquor culture to an unprecedented new height.
However, there is no final conclusion on when Zunyi distilled liquor was produced. Hu Yunyan believes that Guizhou distilled liquor should be produced in the late Yuan and early Ming Dynasty.
With the development of economy and society and the accumulation of liquor making experience, Renhuai Maotai town liquor appeared in the late Ming and early Qing Dynasty. The new raw material sorghum, commonly known as "sand", was added to the roasted grains, and then fermented. The "coarse sand" process of roasted liquor and the "sand returning" process of Maotai liquor took shape.
During the reign of Emperor Kangxi in the Qing Dynasty, maotaichun, maotaishaochun and maotaishaojiu were well-known around the world. During the reign of Emperor Daoguang in the Qing Dynasty, they were praised as "the country of Guizhou people in liquor crown" by Zheng Zhen, a great Confucianist in Zunyi. At the beginning of the Republic of China, the unique "sand returning" process of Maotai liquor was basically formed.
1965: after the liberation of Maotai liquor flavor type, since 1951, all counties have restored or established wineries, industrialized the old distilleries, and Zunyi liquor making has entered the industrial era. From the post liberation period to the 1980s, the most important thing in Guizhou liquor industry was the final finalization of Maotai liquor flavor.
In 1964, Li Xingfa, known as the "king of blending", led the blending team. After thousands of times of tasting, he made a comprehensive analysis of standard liquor samples and liquor samples of different ages and rounds, and finally found three typical liquor bodies of Maotai liquor: Maotai flavor body, cellar bottom body and mellow sweet body. Then a whole set of blending rules was found out. According to this ratio, Li Xingfa named Maotai flavor liquor. In 1965, the Baoding conference affirmed this achievement, and officially designated Moutai liquor as Maotai flavor baijiu.
1986: nearly half of Guizhou famous liquor is produced in Zunyi, which has a long brewing history and has created many folk liquor products. After liberation, Zunyi liquor industry after industrial transformation has also made great development, with famous liquor gathering, including Maotai liquor and Dongjiu liquor, and Xijiu liquor, Zhenjiu liquor and Meijiao liquor. "The five flavor Baijiu in our country has three, namely, the sauce flavor, other flavor, Luzhou flavor, and Moutai and Dong Jiu are also the leading liquor of Maotai flavor and other Baijiu flavor liquor."
In December 1986, there were 23 kinds of liquor in Zunyi City (formerly Zunyi area) which were named "Guizhou famous liquor" (48 kinds in total). "Zunyi Baijiu accounted for nearly half."
