Ruli
Ruli belonged to Yaoqiao town of Zhenjiang. At the end of Yuan Dynasty and the beginning of Ming Dynasty, with the increase of the population of Zhu family, it was called zhujiawei. When Emperor Qianlong went to Jiangnan, he heard that Dongxiang mutton in Zhenjiang was delicious, so he sent someone to buy it. He was greedy and lecherous when he bought mutton at zhujiawei. He molested the village girl and was beaten to death by the local villagers. After learning about this, Qianlong was furious and decided to go to find out the truth in order to make the final punishment decision. However, when he arrived at zhujiawei, the emperor found that all the local people, men and women, old and young, were knowledgeable and polite, so he named them "ruli". In fact, the land, including ruli, Jianxin, Yinjia, Baile and Maohua villages, is generally called "ruli".
General situation of ruli
Zhenjiang's main road, Yaoqiao and Dagang are close to the surging Yangtze River and the towering mountains. With beautiful mountains and rivers, rich products and exquisite food, people are used to calling this place "Dongxiang".
The old street of ruli is antique. There is a ancestral hall of Zhu family (old ancestral hall) with a history of about 300-400 years. The two sides of the gate face the circle between the north and South streets. The plaque of the gate is engraved with the word "ruli". It is said that in the front hall of the ancestral hall there was a red gold plaque with the character "XueDa Xingtian", which is also recorded in the genealogy. Now the iron hook of the plaque is still in use.
Dongxiang mutton
There are many shops selling mutton in Dongxiang. After the beginning of winter every year, every family slaughters sheep in the open countryside of Dongxiang, Zhenjiang. The mutton shop is full of customers. Not only local people, but also many foreign visitors come here by car. For hundreds of years, Dongxiang mutton has flourished.
Ruli is also known for its Dongxiang mutton, which is eaten in many ways. Among them, it is mainly braised in brown sauce. The fat and tender mutton is first boiled, then cracked and frozen into lamb, commonly known as "dry plate". Cut the lamb into pieces and put it in the pot. Add ginger and onion, flower wine, meat oil and rock sugar. Simmer with low heat. Finally, prevent the cut garlic from entering. Serve in the pot. Leg meat is the most fresh and tender of braised mutton, and its specific production process is also very particular. Whether it can achieve oil but not greasy, fat, tender and delicious depends on the skill of the chef.
After the Double Ninth Festival, walking in the streets of Dongxiang, Zhenjiang, it's easy to smell the strong fragrance. Familiar people all know that this is the taste of Dongxiang mutton. In autumn and winter every year, eating mutton and drinking mutton soup is a big food fashion of Dongxiang People in Zhenjiang. Star hotels and roadside stalls have launched their own Dongxiang sheep feast: Braised mutton, stir fried mutton offal, and mutton soup soaked in Jingjiang umbilicus It has attracted countless diners to eat mutton. Dongxiang mutton soup is white and fresh, and tastes better. It is better than Xi'an's steamed bread if it is served with Jingjiang navel. From the beginning of winter to the Spring Festival, Dongxiang mutton is the most coveted. It is tender and delicious, oily but not greasy, with unique flavor and suitable for young and old people. It is a good tonic in winter.
When Dongxiang mutton is sliced into pieces and cooked, the type of seasoning, the time and amount of input are all important, especially the control of the heat, when to make a big fire and when to make a slow fire, which is absolutely based on the exquisite technology. Taking braised mutton as an example, goat is the main raw material. First of all, the mutton is boiled, boned and frozen, and then it is made into "dry board". Dongxiang mutton, also known as "Buddha jumps over the wall", has a long reputation. It is said that a long time ago, in a village in the north of Yaoqiao Town, there lived a widow who was lonely and helpless. She usually kept two sheep for company, even when she went out begging. In the twinkling of an eye, in winter, one day, the widow was teased by a hooligan in public. The more she thought about it, the more sad she was. When she got home, she would hang herself. At this time, the sheep bleated. She thought that if she died and no one fed her sheep, she might as well kill them and have a good meal before meeting the king of hell. So he slaughtered the sheep, washed and chopped them into pieces, and put them into the pot. Then he chopped the broken tables and stools of his family for firewood. He put the only little green onion, ginger, garlic, soy sauce and brown sugar in the pot, and cried while burning. I don't know how long it took to burn the mutton, which was rotten, crisp and fragrant. But I don't have any appetite at all. I think the sheep is always with me. I can't bear to eat it and hang myself. Just then, a wandering monk passed by and knocked on the door. He climbed over the low wall and pushed the door into the house. Suddenly, he saw the widow hanging on the beam. The monk called to his neighbors to save the widow. He advised her not to commit suicide. In order to thank you, the widow served the mutton in the pot. Let's not eat it. The more we eat, the more we want to eat. We'll eat up a pot of mutton. They advised the widow to open a mutton shop instead of worrying about life. So, the money, effort, help her to open a mutton shop, specializing in braised mutton. After the opening of the mutton shop, the business is booming, the mutton is more and more delicious, and the reputation is growing. Some people suggested a name for this dish. The widow remembered that even Buddhist monks wanted to jump over the wall to eat such mutton. It's better to call it "Buddha jumps over the wall". From then on, when people mentioned the "Buddha leaping over the wall" in Zhenjiang, they knew that it was Dongxiang's mutton. In this way, it spread further and further, and Dongxiang's roast mutton also got its name.

Cuisine
Although Dongxiang mutton is a Huaiyang flavor dish, it has its own style and can be served as a table alone. Dongxiang mutton has only fragrance but no smell. In the production of Dongxiang mutton, the local goats that have been growing for 1-2 years and castrated are basically selected. The production process is very exquisite and strict (that is, the raw sheep are slaughtered and boiled, the backbone is removed and frozen into a dry plate), the seasoning is complete, and the heat is appropriate. The dishes made from mutton are also unique and interesting, such as "Zhenjia flavor" (braised mutton) with bright red, crisp, fresh and fragrant flavor. It is said that Zhao Kuangyin has been fighting for many years, but his physical strength is poor. Every winter, he uses sheep to make up for his meritorious soldiers. Don't be greedy for meritorious officials (braised mutton with crucian carp soup). Rich and fragrant "harmony makes wealth" (rice eel and mutton): it is said that it is related to Han Shizhong, a famous anti Jin general in the Southern Song Dynasty. "Xianjia drop eyebrow" (clam mutton) which can nourish yin and nourish Yang: it is said that it is a food therapy dish made by Zhang Guo, the eight immortals, to save a fisherman. Dongxiang Quanyang mat is fat, tender and delicious, oily but not greasy. It does not belong to halal cuisine, but has its own style. Dongxiang mutton attracts many diners from home and abroad every year.
Ancient Architectural Buildings
Located in the eastern suburb of Zhenjiang, the ruli ancient buildings include the 676 meter long T-shaped ancient street building formed in the Ming and Qing Dynasties; the Zhus ancestral hall, which was built in the late Ming and early Qing Dynasties and covers an area of 1200 square meters; the old house, which has a history of 500 years and is known as the "ruli mansion gate"; and the "zhangci Dunhu hall", which covers an area of 8000 square meters, built by Zhang Liang's descendants in the Han Dynasty.

Ruli middle school is one of the oldest schools in Zhenjiang. According to the demolition plan, the school will be abolished in 2010 and students will be transferred to Dagang to study.
