The village has set up a rural cooperative organization to produce sour fish from ecological fish; the Mandan reservoir is rich in ecological fish, and the sour fish pickled from the fish here has been sold to Banna, Kunming and even further places. The fish caught in the reservoir were taken home by the villagers. After careful pickling by the villagers, they became famous sour fish. Most of the fish caught from the Mandan reservoir are small white fish of thumb size and tilapia of different sizes. In the salting process, first remove the fish viscera, wash clean, mix with salt and then put into the jar. According to the villagers, the pickling time of sour fish varies from 10 days in winter to about a week in summer. After that, the pickled fish is basically cured. Then it is poured out, mixed with rice flour, pepper and ginger, and put back in the jar to marinate for 2-3 days. In this way, the pickled fish is made.
