Water chestnut

Perennial aquatic herbs. The underground stolon ends expanded into oblate globose, about 4 cm in diameter, dark brown; the aboveground stolon is cylindrical, up to 75 cm in height, about 9 mm in diameter, tufted, erect, unbranched, hollow, septate, smooth and green. Leaf blade degenerated, leaf sheath membranous, upper part obliquely truncate. Spike 1, terminal, erect, linear cylindrical, light green, upper sharp, base and stem equal thick, 2.5-4 cm long, 2-4 mm wide; flowers several or many; scales wide obovate, spiral or imbricate arrangement, back with fine longitudinal straight stripes. Six setae. On the surface with inverted uncinate hairs, as long as or longer than nutlets; stamens 2, filaments slender, anthers long elliptic; ovary superior, stigma 2 or 3-lobed, dark brown. Nutlets are biconvex, about 2.5 mm long. It blooms in autumn.

It is planted in paddy field. It is cultivated in warm areas of China.

[herbal medicine] the bulb is spherical, slightly flat, the larger one can reach 3cm in diameter and 2.5cm in thickness, with different sizes. The lower end is concave in the center, and the upper end is covered with several aggregated buds, which are covered by withered and yellow scales. The outer skin of corm is purplish brown or dark brown, with obvious links on the corm. There are yellowish brown membranous scaly leaves on the nodes, sometimes with small lateral buds. Crisp, white inside, rich in starch and water, white milk after crushing. It's very sweet. It is better to be big and tender.

It is produced in most areas of China.

[chemical composition] it contains a kind of heat-resistant antibacterial component - water chestnut. The general composition contains 68.52% moisture, 18.75% starch, 2.25% protein, 0.19% fat and 1.58% ash.

[pharmacological action] chusheying has inhibitory effect on Staphylococcus aureus, Escherichia coli and aerogenic bacteria. Heat resistant, insoluble in organic solvents, not adsorbed by animal charcoal. It can inhibit the respiration of E. coli up to 80% (after 10 hours).
