It can be used to make rice, diced chicken and so on, similar to the fish sauce of Sichuan cuisine
Production steps:
Step 1: cut Chiba tofu into slices. It's better to be a little thicker, not too thin, because it will swell when it is fried, and then it will shrink after it is fried. In order to have meat head, I think it's better to cut it a little thicker than usual
Step 2: put some oil in the pan. After the oil is hot, fry Chiba bean curd until it is bright and golden. If there is less oil in the middle, add oil. I used a small frying pan several times. I have a big one at home that I can use
Step 3: Chiba bean curd will swell during frying. Don't worry about it. It will shrink back later
Step 4: the picture below is retracted, but it's amazing. When you put it in the sauce and cook it, it will become full
Step 5: mix soy sauce, sugar, vinegar, sesame oil, chicken juice, onion, ginger, cooking wine and water to your favorite degree of sweetness and acidity, and set aside. (because the Pixian Douban in the back and the soy sauce here are all salty, so don't put salt in this sauce.)
Step 6: then prepare Pixian Douban and dry pepper ring (cut it yourself, cut a piece of the bottom of the dry pepper, then the seeds can be easily poured out, and then cut into a ring)
Step 7: prepare the water starch
Step 8: wash and dice mushrooms, dice onions, cut parsley into small sections, and separate the fat and thin pork (in fact, I use the front leg meat)
Step 9: now let's make the sauce, put the oil in the pot, cool the oil in the hot pot, then add the onion and stir fry until fragrant, then add the fat diced meat and stir fry out the oil
Step 10: then add the diced lean meat, stir fry until the lean meat changes color, stir fry the mushrooms, then add the carrots, green beans and corn kernels, add Pixian Douban and chili ring, stir fry the red oil
Step 11: stir fry more, then pour in the seasoning
Step 12: when the diced meat is cooked, add appropriate amount of starch to thicken, and then add coriander
Step 13: then put the fried Chiba bean curd in, stir fry for a while, and the taste is finished
