Bitter gourd soup with salted eggs
Introduction:

Production steps:
Step 1: wash one bitter gourd and use one peeler
Step 2: use a peeler to slice the bitter gourd skin and put it into a bowl for later use. Then, make another bitter gourd with honey (see my recipe for details)
Step 3: divide the bitter gourd into two parts. Dig out the seeds and slice the bitter gourd as shown in the picture
Step 4: put water in the pot and bring to a boil. Add two drops of edible oil to keep the bitter gourd color. Cook for 2 minutes. Then take out and soak in cold boiled water
Step 5: prepare two cooked salted duck eggs, peel off the shell, and crush them with chopsticks
Step 6: pour a small amount of oil into the pot, heat it for 6 minutes, change the medium heat, add salted duck eggs and stir fry a few times
Step 7: add a large bowl of water to boil (chicken soup is better)
Step 8: drain the water from the soaked bitter gourd slices, put them in the pot and continue to cook for one or two minutes on medium high heat (the soup can be slightly more than the ingredients, do not dry)
Step 9: put it in a deeper plate / bowl. When you eat it, you must match it with a spoon. The soup tastes great with bitter gourd. The salty smell of salted eggs is completely melted into the soup, but there is no bitterness
