Eyebrow crisp
Introduction:
"I learned in some oriental school today. The eyebrows are crisp. The taste is OK, but I really don't think it has anything to do with the eyebrows In the same way, it's the same with "curry corner" in Singapore
Production steps:
Step 1: add 50g flour and 30g lard to form a uniform dough
Step 2: add 100g flour, 15g lard and 50g water to form a uniform water oil dough
Step 3: knead the dough and let it stand for 10 minutes. Then press the oil and water side slightly, and then put the dough on it. Roll out the four sides as shown in the picture
Step 4: wrap the dough with the rolled edge and make sure it is firm
Step 5: roll out the dough
Step 6: roll the dough into three layers as shown in the picture
Step 7: roll out the dough and fold it in three layers. That is to say, rolling, three layers, rolling, three layers, rolling again, four layers this time, and finally rolling. The order is 3, 3, 4
Step 8: roll out the four layers of dough and roll it up from one end
Step 9: take out the uniform dosage
Step 10: with the grain side facing up (that is, the side of the tree rings facing up), flatten it and roll it into a dumpling skin size wafer
Step 11: pack in the right amount of stuffing, then fold it in half, align and pinch it tightly
Step 12: according to the method of hemming, pinch out the pattern
Step 13: after wrapping, deep fry in a pan at low temperature until the skin is golden and crisp
Materials required:
Medium gluten flour: 150g
Lard: 45g (or shortening)
Water: 50g
Bean paste stuffing: some problems
Precautions: 1. Make sure to use medium gluten flour, otherwise the crispy pattern is not obvious. The high gluten flour I used in the picture doesn't look good when it's fried. 2. When rolling pastry, the force must be light, otherwise it is easy to mix and leak pastry. In the same way, you can pack all kinds of fillings you like, such as lotus seed paste, curry and so on.
Production difficulty: ordinary
Technology: deep fried
Production time: one hour
Taste: sweet
