glutinous rice rolls stuffed with red bean paste
Introduction:
"Lvdaguan is one of the traditional snacks in old Beijing. The finished products are yellow, white and red, which are beautiful. Because the soybean flour sprinkled in the final production process is like the yellow soil raised by wild donkeys in the suburbs of old Beijing, it is named "donkeys roll". The raw materials of "lvdaguan" include rice noodles, soybean noodles, Chengsha, sugar, sesame oil, Osmanthus fragrans, qinghongsi and melon kernel. Its production is divided into three processes: blank making, filling and molding. The outer layer of the "donkey roll" is covered with bean noodles. It is golden yellow with bean fragrance and sweet stuffing. The entrance is soft and unique. It is a traditional snack suitable for all ages
Production steps:
Step 1: put the soybean noodles into the oil-free and water-free pan, stir fry continuously over low heat. When the color of soybean noodles changes from light yellow to light brown, and you can smell the obvious smell of beans, you can stop the fire. Let the fried soybean noodles cool slightly and sift for standby
Step 2: put the glutinous rice flour into the basin, slowly pour in water, and stir with chopsticks until the glutinous rice flour is dough
Step 3: place the dough in a container, put it in a steamer, and steam over high heat for about 20 minutes. Steamed glutinous rice noodles should be covered with plastic film to prevent the surface from drying, and then air to warm
Step 4: Sprinkle fried soybean flour on the panel, put the hot glutinous rice dough on the chopping board, sprinkle a layer of soybean flour on it, and roll the glutinous rice flour into a rectangular dough 0.5cm thick with a rolling pin
Step 5: spread the red bean stuffing evenly on the glutinous rice flour, smooth it, lift one end and roll it inward carefully. The roll must be tight, without gaps, so as to avoid looseness in the middle
Step 6: cut the bean roll into equal segments with a sharp knife, and sprinkle the remaining soybean flour evenly on the cut roll with a sieve
Step 7: complete ~ good to do ~ ha ha! ~Finally, I wish you success! ~
