Introduction:
"Yuanzi is a must-have dish at the new year's banquet of Hubei people, symbolizing reunion. When you eat this lotus root, it's thin and crisp. Just when you touch your teeth, when your upper and lower teeth don't get together, you touch the softness of the stuffing. It's soft and waxy. The fragrance of lotus root comes into your brain from your nose. When you feel fragrant, it makes you feel soft all over. You can't find the north. The ginger flavor of lotus root is floating in your mouth, faint and salty Sweet, crisp, soft fragrance, layers of increasing taste, so that you can't stop, unconsciously can't help eating a lot
Production steps:
Step 1: 500g lotus root, try to choose a little crispy and tender lotus root, but don't be too tender as new lotus root, peel and clean.
Step 2: make mud with a bowl or with a blender.
Step 3: wrap the mud with gauze and screw it out a little. Don't screw it too dry. Keep about 30% water.
Step 4: open the gauze, lotus root mud as shown in the figure, the best dryness.
Step 5: cut the ginger into small pieces. If you beat the lotus root mud with a blender, you can beat the ginger into mud together, which makes the taste finer. But I like the ginger grain by grain, so I don't beat it. Friends who don't like eating ginger can beat it up, so they can't eat it.
Step 6: add minced ginger and half a teaspoon of salt into the lotus root paste, mix well with a small spoon. If you like to taste more glutinous, you can add some sticky rice flour to make the sauce, but I like the purer taste, so I didn't add it.
Step 7: apply oil on the palm, and knead the lotus root mud into balls of the same size.
Step 8: heat 60% oil in the pan, deep fry over medium heat until the skin is golden, remove and drain the oil.
