Production steps:
Step 1: 150 grams of rice noodles, I like to use this kind of rice noodles, taste more authentic;
Step 2: put the rice noodles into the boiling hot water. After the water is soft, turn the heat down and cook for about 10 minutes. If it is soup noodles, cook for another 5 minutes;
Step 3: pour the cooked rice flour into the basket, rinse it with cold water until it doesn't stick to your hands and is smooth. Control the water for later use;
Step 4: when cooking rice noodles, you can cut the beef, chop the beef (you can also shred it, but it's not minced and tasty), add the seasoning of salted beef, and marinate for 30 minutes;
Step 5: shred red pepper;
Step 6: remove the root of soybean sprout and wash it;
Step 7: heat the oil to 80% heat, add proper amount of oil, add a little more oil, and stir fry the beef;
Step 8: stir fry until completely discolored, immediately out of the pot, standby;
Step 9: wash the frying pan, add a little oil and stir fry the red pepper;
Step 10: add soy sauce, salt and chicken essence and stir well;
Step 11: pour in the bean sprouts and stir well;
Step 12: pour in the rice flour again. Because the rice flour is dehydrated, it's hard to stir fry. I usually use chopsticks to shake them up first, and then shake them twice before stir frying with a spoon;
Step 13: stir well the rice flour, then add the beef, stir well.

Note: the key point of fried rice noodles is to pour the dried rice noodles into the stir fried rice noodles. Many people can't master it well. If it's really hard to master, you can use the method of mixing the seasoning into the rice flour and then stir frying in the pot, so that the rice flour is not so knot, but the flavor is slightly poor.
