Duyichu old shop in Beijing was founded in 1738, the third year of the reign of Emperor Qianlong in Qing Dynasty. At first, it was a small hotel "Wangji wine shop" opened by Wang Ruifu from Shanxi Province. In 1752, it was renamed "duyichu", mainly engaged in Shaomai.
In the course of hundreds of years of development, Duyi has formed a complete set of exquisite techniques for making Shaomai. Among them, the rolling process of Shaomai is unique, and each piece of Shaomai is 24 folds. There are many varieties of Shaomai in Duyi, which is the only one in China. At first, the old shop was famous for pork stuffing, beef stuffing, plain stuffing and three fresh meats (pork, sea cucumber and shrimp) Shaomai. Then, according to the seasonal changes, Shaomai with seafood stuffing such as fish, crab and shrimp was added, as well as sijimai with pork as the main ingredient, which was made with Chinese cabbage, leek, fennel, South melon, scallion and zucchini. Since the 1980s, duyichu has successively developed hawthorn Shaomai, Yipin hongshaomai, medlar Shaomai and other nutritious Shaomai, and also innovated the technology to make double color Shaomai, colorful Shaomai, feicui Shaomai, mint Shaomai and other characteristic Shaomai. At the same time, the company actively enriched the taste of Shaomai, and launched more than ten series and more than 30 kinds of Shaomai, such as sour, sweet, salty, fresh, fragrant and spicy.
Duyichu Shaomai is unique, delicious and of high ornamental value. There are 24 folds on the top of Shaomai, like a thin waist folded skirt, with thin skin and transparent appearance. Food is fragrant but not greasy, with endless aftertaste. The Shaomai made by duyichu has won the first prize in the national cooking competition, "Jinding Award" and "famous Chinese snack" and other honors. Duyichu old restaurant has also won the title of "famous Chinese restaurant".
At present, the shortage of funds, limited development space, difficult personnel training and other problems are affecting the development of duyichu, and also affecting the smooth inheritance of its wheat baking technology.
