Shanxi traditional pasta has a long history and many varieties, among which Longxu ramen and sliced noodles are the most representative.
Longxu Ramen is a traditional pasta popular in Taiyuan, Shanxi Province, with unique flavor and exquisite production. It was originally court food, and later spread to the people. It is said that this kind of ramen is as thin as hair, continuous as wisps, and looks like a dragon's beard, so the Emperor gave it its present name. In Shanxi, people eat this noodle to wish them a long life or a happy reunion.
The ingredients of longxumian are fine and the production is exquisite. Its method used to be regarded as a unique skill, but it is not secret. When making, mix the flour and water according to the ratio of 5:3. After mixing the flour, apply some sesame oil on it.
