Local specialties
Donkey Burger
Caohe Donkey Meat fire in Xushui is a round fire, which is a special snack in Xushui district and a local snack in Liucun town. Huoshao is a kind of pasta, which is usually made of dead noodles (the dead noodles are unfermented flour). After it is cooked in the cake pan, it is roasted in the stove to make it scorched outside and tender inside. When it is hot, it is split with a knife, and cooked donkey meat, pepper and coriander can be added. Donkey soup and starch stewed stew, can also be included in the fire with food.
According to historical records, Donkey Meat fire was well-known in the Kangxi period of the Qing Dynasty. It originated in Caohe town of Xushui District in the Ming Dynasty. At that time, it appeared in the form of horse meat fire.
In the first year of Jianwen (1399), Emperor Jianwen of Ming Dynasty began to cut the vassal. Zhu Di, the king of Yan, was dissatisfied with the removal of his vassal, so he formally launched a rebellion in the name of respecting his ancestors and punishing "treacherous officials". In April of the second year of Jianwen (1400), the army led by Zhu Di and the army led by Li Jinglong started a war in baihegou, Xiongxian County, Baoding City, Hebei Province. The army of the king of Yan was defeated by the army of emperor Jianwen and was forced to retreat to Xushui. When the food and grass were destroyed, the cooks in the army put the cooked horse meat in the fire and gave it to the king of Yan. The soldiers were satisfied and finally won the battle of baihegou. After Zhu Di claimed that the world was peaceful, Caohe local people in Xushui began to follow Zhu Di's example, killing horses to make horse meat. Until the Qing Dynasty, because Emperor Kangxi attached great importance to agriculture and mulberry production and prohibited the slaughter of cattle and horses, people replaced it with donkey meat, and Donkey Meat fire was born from then on.
