2. Mix brown sugar and two sands in the ratio of 1:5, and pour into a large spoon, about half of the amount.
3. Add water to a tablespoon and cover the sugar noodles.
4. Heat the spoon with water on a casserole. At first, dissolve the sugar in the spoon, and continue to heat until the syrup turns reddish brown (a small basin of clean water can be placed beside the spoon. Drop the syrup into the water and remove it without diffusion.
5. Remove the spoon from the fire, stir with chopsticks for about 3-5 seconds, then dip the chopsticks with baking soda powder and stir in the spoon until the syrup in the spoon changes color (the color will turn light brown) (as shown in Figure 1). At this time, continue to stir and pull the chopsticks up slowly (when the syrup expands, the chopsticks are completely pulled out) until the expansion stops.
6. After the expansion stops, place the spoon in a low heat and bake it. Let the sugar at the bottom dissolve again (as shown in Figure 2). Pour the sugar into the plate.
principle

2. Sodium bicarbonate NaHCO3, also known as "baking soda" and "baking brine"; because sodium bicarbonate is decomposed when heated, it will produce carbon dioxide gas, so in baking, the carbon dioxide produced can make food expand.
3. The chemical reaction formula of baking soda after heating is: 2nahco3 → CO2 + H2O + Na2CO3
4. The carbon dioxide gas produced by the reaction is the molten syrup, which expands before hardening and turns into fluffy "swelling sugar"

Advice:
