Milk powder and syrup must be added before adding ice. It is better for black tea to be warm, because it is the most suitable melting temperature, so that the milk aroma and sweetness can be fully filled in the whole cup of milk tea. If there is a reverse order, the milk tea will lose its flavor! Shake the cup times must be enough, the freezing point of milk tea is enough! First, pour a little milk tea out of the small hole, turn the cup body to pour out, and the rest is to make the milk tea not easy to overflow because of turning the cup body.
Bubble Tea
Bubble tea, also known as Boba milk tea, is a kind of tea beverage popular in Taiwan. After adding Fenyuan into milk tea, it becomes pearl milk tea.
Pearl milk tea is a kind of culture of Taiwan's "bubble black tea". Although it is only added to cassava balls in milk tea, it has become one of the most representative drinks and snacks in Taiwan.
Pearl milk tea is an interesting drink, which is usually made up of black or oolong tea, milk or fruit flavors, sweeteners and chewy texture of Taiwan dishes. It is called QQ (you may think of the "bubble" in pearl milk tea). In most cases, QQ is in the form of cassava pearl.
The name "pearl milk tea" originally came from the bubbles formed when the milk tea was shaken, rather than the interesting pearls in the drink. The drink is known for many other names, including "pearl tea", "Boba tea" and "cassava tea".
origin
In the early days, there was only one kind of address. In 1988, a vendor named grasshopper on Hai'an road in Tainan City, inspired by the then actress Ye Zimei, changed the name of pearl milk tea to Boba milk tea. Later, in southern Taiwan, the saying that Boba refers to big pink circle and Pearl refers to small pink circle gradually emerged. With the development of chain stores in southern Taiwan to exhibition stores in Northern Taiwan, this classification has been gradually accepted by Taiwan residents.
Outside Taiwan, the term "Boba" or "bubble" is also common. The reason is that at the end of 1980, the new Chinese immigrants to North America still called for "Boba milk tea". As a result, "Boba tea house", "Boba planet", "Boba world" and other tea shops have sprung up all over California. At present, non Chinese residents are still full of "Boba" or "bubble". They will say "give me latte, and add some Boba in, please" to the waiter at the counter in English.
Pearl milk tea generally uses large particles of round powder, the diameter of cooked is about 7 mm or more, otherwise the diameter is too small, it is easy to fill the mouth with pearls, and it is not convenient to swallow and chew. But most pearl milk tea merchants still provide small round pearls. Of course, there is also a kind of "Amber pearl", which is made of 100% brown sugar.
legend
Two shops in Taiwan claim to be the inventors of pearl milk tea. Mr. Liu Hanjie, who runs the bubble black tea store "Chun Shui Tang", said that it started experimenting to make milk tea in 1983, and said that the female staff in the store had unwittingly modulated the success. At that time, the ingredients were fruit, syrup, sweet potato and vermicelli. His milk tea was not popular at the beginning, but by chance, after an interview with a Japanese TV program, it finally attracted the attention of businessmen.
The other is invented by Mr. Tu Zonghe of Tainan Hanlin teahouse. It is said that he was inspired by the white pink circle he saw in yamuliao market around 1987. Therefore, the early pearls were white, and then changed to black. However, neither of the two stores has applied for patent or trademark rights, making pearl milk tea the most representative people's drink in Taiwan.
Pearl milk tea was first popular among the black tea shops in the first half of 1990s. As the black tea shop is a hot spot for office workers to talk business and student gatherings before the coffee shops are popular in Taiwan, pearl milk tea has been popular among students. Then, in the vicinity of the school or cram school intensive areas, night markets, etc., gradually appeared pearl milk tea vendors. In the late 1990s, some manufacturers introduced "automatic sealing machine" to replace the traditional cup cap. Many new investors, such as Hangfan food, Leli cup, green dream milk tea, leisure station, Grand Alliance, kuailei and so on, began to expand the business of chain beverage stores with automatic sealing machines. Since then, the pearl milk tea shop has become the mainstream, and because of the participation of chain stores, merchants began to expand the pearl milk tea to the whole world, becoming one of the well-known foods in Taiwan. In order to find out who invented pearl milk tea, "chunshuitang" and "Hanlin teahouse" sued each other in Taiwan courts.
When it comes to pearl milk tea, Taichung city is the birthplace, and Taichung citizens are the first to enjoy its charming taste. In 1987, teahouses near Taichung Municipal government first introduced pearl milk tea. Because of its soft taste and suitable combination of thick and light, the taste of pearl milk tea is excellent. The originator is Lin Xiuhui, the current product development manager of chunshuitang. Lin Xiuhui recalled that her parents once set up a stall in the vegetable market to do business, and she had to go to the vegetable market to help her during her primary school holidays. At that time, what impressed her most in the market was a "Uncle Fenyuan". What she expected most every day was to share a bowl of hot, sticky and smooth Fenyuan with her brother. From then on, when she was greedy, she would cook a pot of Fenyuan to relieve her hunger.
In 1984, Lin Xiuhui worked at the bar of "Yangxian tea shop", the predecessor of Siwei street and Chunshui hall. She learned how to make tea drinks, especially milk tea. Then she was promoted to purchasing. When she went to the traditional market, she saw that "Fenyuan" always bought a bag back to the store. Then she tried to combine Fenyuan with milk tea, and a cup of pearl milk tea with touching taste was born. In the early days, pearl milk tea was like Lin Xiuhui's "private tea", which only shared with her boss and colleagues. It was highly praised. When Lin Xiuhui was promoted to the manager of Siwei store in 1987, she wanted to sell this kind of private tea, so her colleagues used their brains together to name the tea. Some people suddenly thought that "the pink circles in the milk tea are like pearls", so the beautiful name of "pearl milk tea" was called. Pearl milk tea was sold all over the black tea shop in Taichung City 1 months later, the four Siwei street and the black tea shop near the city hall. Pearl milk tea Chinese mainland drinks were pearl milk tea. The people from other places went to Taichung. They must come to a cup. 3 months later, the pearl milk tea was seen in almost all the stations. The tea shops in Taiwan spread overseas chains, and the tea drinking expedition to mainland China, Southeast Asia, Europe and America. Cheng went to tea shops in Taichung city to learn from the experience, hoping to make tea drinks with Taiwanese flavor. Until today, pearl milk tea is still ranked the top 3 in the black tea shops, tea stalls and chain stores.
Pearl
Pearl milk tea uses "Pearl", which is made of sweet potato powder (Southern version, that is starch). Before adding milk tea, the powder circle is usually soaked in syrup to ensure that the powder circle can still keep sweet taste in the sweet milk tea. Black tea is usually used as the base of milk tea, but some stores provide pearl milk tea with green tea (called pearl green milk or pearl milk green). There are also many stores to coffee jelly, bean curd, pudding, fairy grass, and other similar taste of food added to milk tea, allowing customers to choose freely to increase the taste.
As for the "Pearl", generally use the powder round with larger particles, and the diameter after cooking is about 7mm or more. Otherwise, the powder round is too small, and it is easy to become "full of pearls" when using the tea straw with large diameter, and it is not convenient to taste the mellow fragrance. Black tea pearl milk tea in southern Taiwan will be called "Chao Ba milk tea" with a large powder and round pearl milk tea. However, in Northern Taiwan, milk shops usually only sell "pearl milk tea" and use large round powder, which later became the general name and specification of the whole island.
In the early 90s, the chain stores selling bubble black tea were quite popular, such as "Xiao Xie", which were popular places for salesmen to talk business and students after school gatherings. On their menu, pearl milk tea is the most popular product among students. In the vicinity of schools, cram schools and night markets, vendors of pearl milk tea are gradually emerging. Students and young lovers are often seen shopping while sucking precious milk.
