[chemical composition] the general chemical composition of silkworm eggs is as follows: moisture 59.90%, ash 1.5%, crude fat 8.37%, crude fiber 0.75%, dextrin 0.67%, starch 0.08%, reducing sugar 0.75%, protein 24.50%, ammonia nitrogen 0.015%, amide nitrogen 0.014%, amino acid nitrogen 0.190%.
During dormancy, the glycogen contained in the egg changes into sorbitol and glycerol, and at the end of dormancy, the latter two become glycogen again. Silkworm eggs also contain trehalose. The highest content was found 2-3 days before hatching.
The water-soluble proteins of the unheated silkworm eggs are hyaluronic acid, albumin and globulin, while the heated dried silkworm eggs contain glutenin and gliadin besides the three proteins mentioned above.
