Shanxi old mature vinegar is the first of the four famous vinegar in China, and its brewing technology is the same as the vinegar making technology since the Western Zhou Dynasty. In the first year of Hongwu (1368) of Ming Dynasty, the brewing masters of "meiheju" in Taiyuan vinegar workshop created the technology of "fumigation" and the aging technology of "basking in summer and fishing for ice in winter", which made the brewing technology of Shanxi old mature vinegar develop to a new level. After more than 600 years of inheritance and development, the brewing technology of Shanxi old mature vinegar, which is mainly based on manual skills, has gradually taken shape.
